1 1/4 cups flour 2 tablespoons brown sugar (or white/regular/etc) 2 teaspoons baking powder 3/4 teaspoon salt 1 1/3 cups soy milk 1 tablespoon egg replacer 2 tablespoons of water Add semi-sweet chocolate chips

Mix together everything but soymilk and egg replacer and water, then add the rest.
Continue to cook, serve and enjoy!

I increased the recipe by 50% (my brother wanted to try one and the recipe above only gives about 1 or 2 servings anyway) For chocolate chips, I added about 1/2 cup of them. This was the perfect amount. Also, I added about 1/2 teaspoon of pure vanilla extract...I dunno why, but I gave it a shot. lol...maybe because the previous pancakes I made did not have a ton of flavor and I didn't want to have to slobber a ton of maple syrup on top of them. (in fact, I ate them plain and they were still yummy)
The ONLY thing that I probably messed up on, was too much egg substitute. I made about 1 egg substitute worth of flaxseed/water and then another egg with some cornstarch and water. Also, the amount of baking powder MIGHT be slightly high.
If I would make any changes, FOLLOW THE INSTRUCTIONS...I thought that I might have needed more "eggs", but it clearly didn't. ALSO, you might want to cut the baking powder down to 1 1/2 teaspoons.
Even the way I made them, they were DELICIOUS! The BEST pancakes I have made yet! The awesome thing is, next time I can tweak the recipe and possibly make them better!
