Chocolate P-Nut Butter Squares
Allergy Warning: peanut butter

Makes: 12-16 squares
For those of you who adore the marriage of chocolate and peanut butter, this square is for you! A silky smooth layer of peanut butter cream covers an oat base, topped off with a silky layer of chocolate.
Oat Base:
1 cup quick oats
1/2 cup barley flour (or unbleached all-purpose flour)
1 tbsp unrefined sugar
1/4 tsp sea salt
1/4 tsp baking soda
3 tbsp pure maple syrup
2 1/2 tbsp canola oil
Peanut Butter Center:
1/2 cup natural peanut butter
1/3 cup unrefined sugar
1/2 tsp sea salt
1/2 cup plain non-dairy milk
Chocolate
3/4 cup non-dairy chocolate chips
1/3 cup plain non-dairy milk
Preheat oven to 350'F (176'C). To prepare the oat base: in a large bowl, combine the dry ingredients, then stir in the maple syrup and canola oil. Stir through until well combined; the consistency will be crumbly yet hold together somewhat when pressed. Transfer to a lightly oiled (or lined with parchment paper) 8"X8" pan and press in evenly. Bake for 15 minutes, then remove and transfer to a cooling rack.
While cooling, prepare the peanut butter center: in a saucepan over medium heat, combine all the ingredients. Stir the mixture occasionally until it becomes smooth and uniform, and thickens (do not let it boil). It will be loose and seperate initially, then will thicken to a creamy texture. At this point, pour mixture evenly over the oat base, and refrigerate for 15-20 minutes.
In the meantime, prepare the chocolate topping: in a small saucepan over low-medium heat, combine the chocolate chips and milk. Stir occasionally, until the chocolate and milk melt together and are smooth with no seperation of the mixture. Remove from heat. Once the oat base has chilled, pour the chocolate topping evenly over top (the chocolate topping can cool somewhat). Refrigerate again until completely cool and cut into squares.
My Review:
This stuff is REALLY REALLY sweet but tastes like heaven!! I will so make this recipe again in the future! Highly recommended!
